The short answer
By the sun, mostly, and by memory. A bee notes the angle of the sun on the way out and holds that reference for the journey back, adjusting as the sun moves across the sky.
They also tell each other. A bee that has found flowers dances a waggle dance in the dark of the hive, and the angle and length of the dance describe the direction and the distance. It is a map made of movement.
