Partly because they can afford to be. Capybaras live in groups, and with many pairs of eyes watching, no single animal has to stay alert all the time.
They are strong swimmers and simply slip into the water when something worries them, which is a very low-drama way to escape. Other animals seem to notice the calm: birds and even monkeys rest on and around them.
