The short answer
Air that is not all moving the same way. Warm air rising, wind spilling over mountains, the edge of a fast river of air high up: where those meet there are invisible hills and dips, and the plane rides over them.
It feels dramatic and it is thoroughly ordinary. Wings are built to flex, and that bending is part of their strength rather than a sign of strain. The seatbelt is there so the bumps stay comfortable.
