The short answer

Sound is ripples travelling through the air, and your eardrum is a small tight skin that those ripples push against.

Behind it, three tiny bones, the smallest in your body, pass the movement inward to a coiled tube of fluid, where thousands of little hairs turn that motion into signals your brain reads as sound. Your ears never switch off. Your brain simply turns the volume down while you sleep.
